Thai Chicken Chopped Salad



With soft chicken, crunchy vegetables, and a sweet and sour Thai dressing, this Thai Chicken Chopped Salad is a colorful and tasty dish. It's a quick and healthy way to eat.

Ingredients:

  • 2 cups cooked chicken breast, shredded
  • 4 cups mixed greens lettuce, spinach, and kale
  • 1 cup red cabbage, thinly sliced
  • 1 cup carrots, julienned
  • 1/2 cup cucumber, diced
  • 1/4 cup red bell pepper, thinly sliced
  • 1/4 cup fresh cilantro leaves, chopped
  • 1/4 cup roasted peanuts, chopped
  • 1/4 cup bean sprouts
  • 2 tablespoons sesame seeds
  • 1/4 cup Thai sweet chili sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/2 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions:

Put the mixed greens, red cabbage, carrots, cucumber, red bell pepper, cilantro, and bean sprouts in a large bowl

Add the chicken shreds to the salad

Mix the Thai sweet chili sauce, soy sauce, lime juice, fish sauce, honey, garlic, and ginger in a different bowl using a whisk

Pour the dressing over the salad and toss it around so that everything is covered

Put the chopped peanuts and sesame seeds on top of the salad

Add pepper and salt to taste

Serve right away and enjoy!

Vegan Peanut Butter Caramel Chocolate Chip Cookie Bars



These Vegan Chocolate Chip Cookie Bars with Peanut Butter and Caramel are sweet, salty, and chewy all at the same time. They are a tasty treat for any event because they are made with healthy ingredients.

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2 cups oats
  • 1/2 cup dairy-free chocolate chips
  • 1/4 cup chopped peanuts optional

Instructions:

Preheat oven to 350F 175C

In a mixing bowl, combine peanut butter, maple syrup, melted coconut oil, and vanilla extract until smooth

Stir in oats until well combined

Fold in chocolate chips and chopped peanuts, if using

Press the mixture evenly into a lined 9x9 inch baking pan

Bake for 20-25 minutes or until edges are golden brown

Remove from oven and let cool completely before slicing into bars

Snickers Cookies



Indulge in the delightful combination of chocolatey cookies with the chewy goodness of Snickers bars. These Snickers cookies are a treat for chocolate and caramel lovers!

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped Snickers bars
  • 1/4 cup chocolate chips

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a bowl, whisk together the flour, cocoa powder, baking soda, and salt

In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy

Beat in the egg and vanilla extract until well combined

Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined

Fold in the chopped Snickers bars and chocolate chips

Scoop tablespoon-sized portions of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart

Bake in the preheated oven for 10-12 minutes, or until the cookies are set around the edges but slightly soft in the center

Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
