Ingredients:
- 5 lbs potatoes, peeled and diced
- 1 cup chicken broth
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tsp dried parsley
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions:
Place diced potatoes in the slow cooker
In a small saucepan, melt butter over medium heat
Add minced garlic and cook for 1-2 minutes until fragrant
Pour chicken broth over potatoes in the slow cooker, then pour in the melted butter and garlic mixture
Cover and cook on low for 6-8 hours or high for 3-4 hours, or until potatoes are fork-tender
Once potatoes are cooked, mash them in the slow cooker using a potato masher or fork
Stir in sour cream, milk, dried parsley, dried thyme, salt, and pepper until well combined
Cook on low for an additional 30 minutes to allow flavors to meld
Serve hot, garnished with additional butter or herbs if desired
